Mexican rice

Do you like the rice a roni but don't want all the salt and chemicals with it Make your own.

1c rice
1 pt homemade salsa
1 pt water
2Tbs butter

Melt butter in sauce pan, add rice stir until coated add salt and pepper to taste.  Slowly add jar of salsa and water bring to boil cover and cook on low for 15 min stiring occasionally.  Remove lid and cook for an additional 5-10 min until water is absorbed.

Cheesy Chicken Enchiladas with Sour Cream Sauce

Makes 10 Enchiladas

1 pack flour tortillas
1/2 store bought rotisory chicken skin removed and shreaded
4oz can mushrooms drained
1lb mexican cheese blend
5Tb butter
5Tbs flour
2cans chicken broth or 28 oz homemade
1 c sour cream

Preheat oven to 350. Spray 9x13 or 11x14 pan with non-stick spray.  Put shreaded chicken 1c cheese and 1/2 the can of mushrooms in a bowl mix well.  My 7 year old son filled and rolled the tortillas.  Make an area to lay everything out lay tortilla flat on work surface fill each with some of the chicken mixture and roll, place seam side down in the pan.  Once done with next step is to make the sauce.  In a sauce pan melt the butter once melted add the flour stiring constantly cook for 1 min to cook out the flour taste.  Slowly wisk in the chicken broth until smooth bring to a boil to thicken once thick add 1/2c cheese salt and pepper to taste and the sour cream.  Do not boil stir until everything is melted and incorporated.  Pour over the enchiladas and top with as much extra cheese as you like.  Bake for 25 min.
You can add a small can of chopped jalapenos or chili if you like it a little spicy.  My kids won't eat it with peppers in it so I saved them to put on top of mine after they were cooked.

Serve with some mexican rice and roasted corn salsa.

Pancake Muffins

This is an easy and quick recipe for breakfast in a hurry.

Pancake mix or a bag of pre-made pancake mix.

Prepare according to package directions enough for 12 pancakes.

Preheat oven to 350  Spray muffin pan with non-stick spray or use muffin liners if you like.

add 1/4 c pancake batter to each muffin cup you can now add any add-ons that your family likes.

My kids like blueberries, some days chocolate chips, or other fruit. You could also make savory ones as well with bacon or sausage.

I recommend that you make extra because they go quick.  Once they cool you can package and freeze them for a quick breakfast just take out of the freezer and pop in the microwave for 30 seconds to 1 min.
Makes enough for one pan (12 muffins).

Banana Nut Muffins and Bread

3c Flour
1 1/3c White Sugar
3tsp Baking powder
1/2tsp Baking soda
1/2 tsp Salt
1 1/2 c Rolled Oats
2c Mashed Banana
2/3c milk
1/2c vegetable oil
2tsp vanilla
4 eggs
1/2c chopped walnuts (optional)

Preheat oven to 350.  Spray loaf pan and muffin pan with non-stick spray or butter and flour pan.
Combine first 6 ingredients (all dry ing)  in large mixing bowl.  In a separate bowl mash 6-8 ripe bananas (you can usually find bananas on clearance)  add the rest of the wet ingredients to the mashed bananas.  Once incorporated add the wet ingredients to the dry and add walnuts and fold together until combined.  Pour half the batter into the loaf pan then the other half into the muffin cups.  Bake Muffins for 25-30 min and loaf for a total of 50-55 min.  When done let sit in the pan for about 15min then take out of pan and cool completely on wire rack.  Can be wrapped in plastic wrap if going to use immediately or placed in freezer bags and frozen for future use.
